Today these classes are offered in four hundred cities in the region, within one hundred and twenty five miles of Aix-en-Provence.

He also started online cooking classes in 2019, teaching Provencal cooking via video conference, sometimes teaching up to four hundred people at a time.

In 2023, Chef Clement took on a new challenge, taking over an olive grove from his retired father. He created L’huile des Remparts an olive oil sold based on availability.
